White Bean And Spinach Soup *Vegan*

This dish is a good source of Protein, Fiber, Iron, Magnesium, and Calcium. Perfect for a vegetarian diet. Very warm and comforting and amazing during cold winter months.


Step 1I used a small bag of dried white beans. Boil beans until almost firm. About 45 minutes on high heat. I always boil my beans with a bay leaf.
If you wish you can use canned white beans (30 oz.)

 


Step 2Add 2-3 cups frozen spinach and half a red onion sliced.
Once spinach is tender and 1 cup mixed carrot and celery
Add mixed veggie bullion cube and 1 cup water. Boil until carrots are tender.




Step 3Season to taste. I added Season salt, Oregano, and some dried Parsley.
Enjoy! This tastes delicious with a hot roll.

Easy Vegan Split Pea soup.

I love split pea soup, but since I'm vegan it can be difficult to find good soup without bacon or cream. This is a easy option that tastes very elegant. Bonus the dash of Extra Virgin Olive Oil is amazing for reducing bad omegas and lowering cholesterol.
Sorry I didn't take pictures of the steps, I wasn't expecting it to turn out so yummy!



First gather your ingredients:
2 cups dried split peas
5 cups water
2 cups vegetarian broth (chicken broth optional)
Half a large onion
Extra Virgin Olive oil (EVOO)
Paprika
Salt & Pepper


*Saute your onion until caramelized, about 2 mins. (Optional:For creamier soup add half a peeled zucchini)

*Once your onions are done add your split peas, and water.
  Cook on med. heat about 20 mins. or until tender.

*Once pea mixture is at desired consistency, scoop 5 cups into blender.
  Blend until almost smooth. Mix with remaining pea mixture.
  Add veggie or chicken broth and allow a minute for the flavors to meld.

*Salt & Pepper to taste. Garnish with a drizzle of Olive Oil and paprika.
  Congratulations you have made split  pea soup!
